be true, be delayed!

OK, so the original launch date of be true designs and betruedesigns.com was supposed to be today. Well obviously it isn't (b/c I'd be putting on a huge hoopla if it was) ...so patience dear friends, it's on its way, I promise you'll be the first to know!

Besides that my knee is better. Think I'll get out to run tomorrow sometime. B is going dirt bike riding in the morning, and I have a bunch of errands to do. But luckily nothing to pertinent for the weekend. Just cleaning and getting ready for a meeting I have in Atlanta on Monday.

Fiesta Invitation!

I'm working on a bachlorette invitation (they're going to Mexico...um, can I come!?) and here are my 3 favorites...



In another note, I've totally messed up my knee, or the muscles around it. I went to webmd.com to find out what it could be (b/c the doctor can't see me until 2 weeks from now) and it says I have a torn acl...pretty much don't think thats it because there was not any major event that started the problem (i.e. I did get hit in the knee by anything!). It just started to hurt and feel tight and uncomfortable. Hmmm, hope this problem resolves it self to I can get back on the running train asap!

Birthday Weekend

I know this is Wednesday, but I still wanted to post about the weekend. It was great. It was B's 28th birthday and we had such a great weekend at home (something we haven't gotten the chance to do since we've move to Knoxville really). Friday we ran in the park then went home got ready and went to our new favorite Mexican joint for some yummy food and big ole Margaritas! So big we didn't finish (or at least I didn't) all of them.

Saturday morning we woke up early to beat the heat and headed to the park. B ran 10 something miles while I ran/walked 5. Oh and Jackson ran too! After that we headed to grab some lunch and took it to another park nearby and had a lil picnic. Then of course we went home and took a nap! I took B to a nice dinner on the UT strip and then we went to see the Terminator movie (it was his birthday so I had to go! but it turned out pretty good). When we got home it was Key Lime cake time (you can see that mine didn't turn out exactly like the one I posted the other day, but it was still very very yummy!)

Sunday we slept in a bit and then spent the rest of the morning cleaning like crazy! (My MIL is on her way right now to come puppy sit so I had to make sure we had everything in tip top shape!). Somehow that afternoon I got talked into a bike ride. So we headed towards the river. In Knoxville they have these things called a "greenway" all over the city. Its just a paved path around the city but most of it is in the woods or away from the street. We rode our bikes 12 something miles and although I enjoyed myself, I was sore the next day because I am still tense on the bike. Hopefully I'll get better the more we ride.

And that was our awesome weekend! Very low key, but very much our style.
Anyways like I said before the MIL is coming tonight. She is going to watch Jackson for the rest of the week/weekend while we're in New Orleans for Emily's wedding. We head to Nashville tonight because we have a flight out at 8 something tomorrow morning. I can't wait for the rest of the week though! Thursday we'll get to play around the town because come Friday/Saturday I'm all booked up with bridal duties!
And I hear its going to be a normal New Orleans summer with the temps around 95 (+humidity) and some rain chances...yuck! But I can't wait!

B's Birthday!

Tomorrow is B's 28th birthday. He'll finally be joining me in this downward spiral called the "late twenties". And we actually have a few events planned. Of course there is our crazy major run tomorrow morning. That will probably last 1-2 hours. Then its off to the farmer's market and to get some breakfast. A quick house and car clean and then we're going to take our bikes and ride the greenway around the campus (this is a B birthday request). Following that it's off to Lakeview Tavern for a delicious meal on the water while the sun sets (hopefully it'll be setting and not hiding behind rain clouds like it has been all week!). And dessert at home while watching the Playoffs (a very B day)
Another treat for B, is his birthday cake. Now I made this yummy creation last year.....Key Lime Cake....but I actually forgot a few ingredients, so this year I was sure to follow the instructions. Here is what I was hoping mine would look like:
UNfortunately the icing isn't that thick, but the bundt cake looks perfect. Hope he like it! and I hope he shares!

Run'n

So how's the running thing going, you ask?

Wellllll its actually going well. Not only did I continue to run on my own (no pressure from the husband) while B was away a couple weekends ago, BUT I hit my mile goal last week (yea!!) it was hard, but I did it, so thats an accomplishment. Now only 12 more miles to conquer before next March! ha! And Monday was a good day too, because I didn't want to go. I had a looooong weekend and I wanted a day to recover. But B pushed and it was such a beautiful day....and, Oh yea, and he bribed me.....meet my new kicks:

My Nike Structure Triax+ 12. Long name, but pretty nice shoes so far. The run on Monday went well...even though I had to kind of start from scratch since I had 4 days of not running to erase. But we have all week to continue without any interupptions and Saturday the plan is for a big run. B is going to complete 10+ miles, and I, well I will hopefully be able to run straigh for 1.25-1.5 miles by then and then run/walk the rest of the 5 mile loop we run on.

Today it looks like its going to rain, so it might be a treadmill day. yuck!

oh well

We tried to get to the park before the rain came. We weren't successful. Jackson got to run around for a bit chasing birds in the rain while B and I tried to hide from the storm under a tree. Then there was lightning and a huge boom. At that point Jackson tucked his butt under his legs while he was running straight to the car! Needless to say he was a bit frazzled and this is what he had to say about his rainy day experience:

Ok, so I'm working on this whole running thing, right. Well yesterday was a true test. I had the worst headache ever when it was time to go to the gym ( by order of my hyper active husband who loves the gym as much as I like , say Target). Surprisngly enough I managed to make it there without any complaints. Just get it over with was my mantra. Well normally I do a little tanning ( its one of those 2 birds one stone facilities) and then get to working out. Well today since we got in earlier than usual, the tanning facilities were all taken. Which is no fun when you plan on getting a little "tanning nap" before you have to workout and then you just have to work out instead. Ok fine. I'll just run on the treadmill. Treadmill I say, not elliptical. The actual treadmill! Good for me I thought! When I got to the line of treadmills only one other person was on one. I picked the middle one, not close to anyone, good lighting, view of the tv and perfect people watching spot. So I'm off, running (and some walking) my little heart out. Then two girls come over and get on the equipment to my right. So its me, and these two girls. Now I have my headphones on blaring some good tunes AND the entire gym is blaring some crazy gym music too. This did not interfere with my friends on the right from practically screaming at each other about their day. "I ate this....I can't believe she did that...when is he...etc". Kind of annoying but not that big of a deal.....yet. Then the girl on the far right gets off her treadmill and gets on the one to my left. Thus making an Erin treadmill sandwich. But the yelling converstation does not stop. I am in the middle of them as they continue to scream their days story back and forth. THEN the girl on my right decides that whatever the girl on my left just said wasn't true and called (with her cellphone) someone else to discuss, then yells back to the other girl that so and so says shes wrong. So here I am just trying to be a good little worker outer, stuck in between a yelling converstation between two loud ass girls AND their cell phone buddy. Anyways long story short I cut my run/walk 2 mins short thinking 2 mins might not keep off any pounds but my ears and sanity would thank me. I couldn't handle it! And no lie, when I was walking down the stairs to the BOTTOM floor of the gym I could still hear them! wth!

Running again tonight in the park with B and Jackson. Hopefully it won't rain on us!
Then tomorrow its off to the ATL for my friend Emily's Couples Kitchen shower I'm helping to throw. I'll post pics of the decor when we get back!

Stomp!


So last night B and I went to see Stomp at the Tennessee Theater. And not only was the night wonderful but the show was awesome! We started out the evening going to Market Square to get some grub, but my idea to go to the Tomato Head kind of fell through when we got there (at 6!) and it was packed. Not only was Tomato Head packed but almost every restaurant on the Square was full of people. So we decided to go to a new place called Trio. It was really really nice. Very casual atmosphere but with higher end type food. I had a cajun shrimp pasta and B had a meatload or something. But the food was so good. Very homecooked and not that expensive at all.

After that we made our way to the theater around the corner. We havent been to the Tennessee Theater yet and were making an effort to mark it off our Knoxville "to do's". The place it self was amazing. It was so grand and ornate. I think they just had a remodel or something, but everything was spotless and beautiful. I guess I was thinking since it was a smaller theater it was going to be a little rinky dink. But it was not. You can take a virtual tour here.

Anyways so we got there perfectly on time and then the show starts. I had so much fun watching and listening to all the beats. I have seen the show a couple years ago, but they've changed it since then. Added some new materials to play with (who knew a box of matches could be a musical insrument!) and there was a lot of humor in the show. The best part of the night was when the show was over and everyone was still cheering the main guy came out for an encore with some of the other performers and somehow they got the audience clapping to 3 different ryhtyms (on purpose of course). It was silent except everyone clapping and it made such a great beat!! Needless to say everyone was stomping and clapping as we were walking back to the car. We even stopped for some Marble Slab for some ice cream and people were clapping and stomping in there too! All in all is a was a great date night and was a perfect way to break up the week!

PS- I ran/walked on Tuesday, and Wednesday I was so sore! Even my knees were sore, which never happens. We went to a park close to the UT campus and it was a beautiful day, but there were A LOT of hills to get through. So we're doing the gym tonight and running again tomorrow, hopefully it will get easier!

better late than never!

Ok, so maybe I should scrap the whole "Menu Monday" thing. it hasn't really worked out for me so far and I've been so busy with work, house and trips so far that I haven't really been a good blogger either...please forgive me! But today is another day! So lets start over and let me redeem myself!

Ok, menu for the week:
Monday - Grilled chicken with red and green peppers + bbq sauce + cous cous
Tuesday - Turkey Burgers + Baked French Fries
Wednesday - out to dinner! We're going to a show at the Tennesse theater (Stomp) so we're going to do dinner down at Market Square. I'm thinking of going to this place called the Tomato Head. Its always packed and supposedly has really good pizza!
Thursday - I want to make some sort of shrimp and pasta ensemble but I haven't found a good recipe yet.
Friday - who knows!

And here's something I found while I was consolidating my files yesterday. One of my ensembles I did last year. I really really like the yellow and black together! Which made me wonder what colors I would do for my wedding if I could do it all over again....originally I did a purple-ish fushia with a sherbert orange. It was perfect for our June wedding, and I always like to be bright. But I think it I could do it all over I might lean toward a lime green. Maybe a lime green and a pool blue?

Anyways yesterday B tricked me into saying yes to train for a half marathon. The back story - this weekend we went to Nashville for the Country Music Marathon to watch some of our good friends run. B didn't run because he didn't train so it was B and the girls watching...and walking! I swear we walked at least a half half marathon. But back to the story. So B was sad when it was over because he is a runner. He is a guy that can pick up and run 5+ miles on any day without any training or prep. (Me not so much). And he was a really good runner in high school. So he kind of felt left out a bit! He decided that he's going to run the half next year. And before the Nashville one there is a Knoxville one. So I was all "yea, that sounds like fun, I'll run the 5k while you do the half" and somehow he got me into saying that I'd not only run the half in Knoxville but that I would do it in Nashville next year too. Hmmm...we'll see about this. I think I could do it, I just have to get into the routine for running everyday! So, guess where we're off to this afternoon! First training day. Pretty sure it will be B running past me a lot while I struggle with a run/walk. Wish me luck!
